Mix coarse salt and lime zest in a plate and run a lime wedge on the edge of your glass. Rim the edges with the salt mixture.
Add the strawberries and lime juice to a cocktail shaker or large glass and muddle.
Add the tequila, triple sec and simple syrup and stir to combine.
Fill a glass with crushed ice and strain the margarita mixture into the glass.
Top with champagne and garnish with lime slices, strawberries and edible flowers.
